Linguine with Peppers and Oregano

Most of us are really busy these days.  After a long day at work, we try and pick up a gift or two for under the Christmas tree, and then, exhausted, we think about dinner.

Believing that we’re too tired to make something, we stop and pick up some fast food, even though we know it’s not the best for us.  Don’t do it! Instead, try this quick and simple recipe, which is not only easy, it’s  also cheap and tastes great.  Teamed up with a salad, some bread, and a glass of wine, you’ll forget all about the stresses of your day.

Linguine with Peppers and Oregano

serves 4-6

1 12 oz jar roasted yellow peppers, drained and cut into strips

1 13.25 oz box Dreamfields linguine (I always use Dreamfields, a great tasting, low carb pasta)

1/2 cup extra virgin olive oil

1 tb dried oregano

salt and pepper to taste

Bring large pot of salted water to boil.  Add pasta and cook according to box directions. Cut peppers into thin strips and set aside.

After cooking pasta, drain and transfer to warmed bowl.  Add the oil, oregano, peppers and salt and pepper to taste.  Toss well and serve immediately.  Traditionally, cheese is not added to this pasta, but it’s up to you.  As for me, I put parmesan on everything 🙂
