Marinated Lemon Zucchini

6 tb fresh lemon juice

2 tb extra virgin olive oil

2 tb Italian parsley, finely chopped

1 large garlic clove, finely chopped

1/2 tsp salt

1/4 tsp black pepper

4 medium zucchini, cut into 1/2 inch thick rounds

In a large bowl, whisk together lemon juice, olive oil, parsley, garlic, salt and pepper. 

Add the zucchini and toss well to combine.  Cover and refrigerate for at least 8 hours, or overnight, stirring a few times to meld flavors.

Preheat oven to broil.  Position oven rack 4-6 inches from heat source.  Lightly oil a large baking sheet.

Remove zucchini from marinade, and arrange in a single layer on baking sheet.  Broil until lightly browned, about three minutes on each side.  Serve at once.
